I think you struck the right balance with Tony and his Dad. It was neither fairy-tale perfect or soap opera over the top. I'm glad that Gibbs was so sure with Tony that they'll be able to do everything one day. You wrote his not wanting to be touched quite well with him moving Gibbs hands away a few times before Gibbs called him on it.
